Seyal maani or seyal bread as known in Sindhi is one of our favorite childhood breakfast.
Leftover pao or bread even roti cooked in a spicy tangy gravy of onion tomatoes makes the best Sunday breakfast!
Left over pao/bread/rotis broken into pieces, 1 medium sized onion, a coarse paste of green chillies, garlic, coriander and lemon juice, 3 medium sized tomatoes made into a puree, coriander powder, turmeric powder, chilli powder, kitchen king masala.
In a pan add some oil, add cumin once it turns fragrant, add curry leaves and onion.
When the onion turns translucent, add tomato puree, once it cooks well add a tsp each coriander powder, turmeric, red chili powder, kitchen king masala, salt to taste and a pinch of sugar. Let everything cook for 2 mins.
Add the green paste and cook for one more min.
Add 2 cups of water and let it come to a simmer. Add the pao pieces and mix everything well. Cover and let it cook for a min. Garnish with some coriander leaves and serve with adrak wali chai!
