Ingredients
Levain:
👉Unfed starter x 50g
👉Bread flour kingarthurbaking x 50g
👉Water x 50g

Sourdough Ingredients:
👉Bread flour x 400 g
👉Whole wheat flour kingarthurbaking x 100 g
👉Matcha powder senchanaturals x 20g
👉Water x 370-375g
👉Levain x 150g
👉Salt x 2 teaspoons

Instructions:
6.50am – Autolyse
7.50am – Add levain & salt; stretch & Fold
8.35am – Stretch & Fold
9.05am – Stretch & Fold
9.40am – Stretch & Fold
10.10am – Stretch & Fold
11.30am – Cold & Fold
12.30pm – Cold & Fold
1.30pm – Shaping
2.00pm – Retard in fridge

💚Convection Bake with Le Creuset Dutch Oven lecreuset :
➡450F (with lid) 28 minutes
➡410F (without lid) 20 minutes
