Lemon Blueberry Cupcakes 🫐 🧁

🧁Cupcake time, I know that Christmas is not arrived yet, but I found these icing decorations are too cute so decided to make these cupcakes 😅
🧁My first attempt doing frosting job, I’m glad that I didn’t ruin them
🧁I brought them to my colleagues and they said the cupcakes very light and delicious

👉Softened butter x 1 stick
👉Sugar x 90g
👉Egg x 2
👉All Purpose flour x 195g
👉Salt x 1/4 teaspoon
👉Baking powder x 1 teaspoon
👉Milk x 120g
👉Lemon juice x 2 tablespoon
👉Vanilla extract x 1 teaspoon
👉Lemon zest x 1 tablespoon
👉Fresh Blueberries 🫐

➡️Mix together butter and sugar
➡️Add in the eggs, beating well after each egg
➡️Add in the lemon zest and mix
➡️Add in dry ingredients and the milk
➡️Finally, add the lemon juice using a spatula
➡️Use a spoon for scooping to evenly divide the batter
➡️Bake in a preheated Convection oven, 350F, for 22-25 minutes.
➡️Use a toothpick to check if they are done
➡️Let them cool before start with cream cheese frosting

🧁Cream Cheese Frosting:
👉Butter x 1/4 cup
👉Cream cheese x 8 oz.
👉Powdered sugar x 100g
👉Vanilla extract x 1 teaspoon
👉Lemon juice x 2 tablespoon
👉Icing decorations

➡️Mix together the butter and cream cheese until smooth and fluffy
➡️Add in the powdered sugar, vanilla, lemon juice, and combine
➡️Transfer to the piping bag and pipe each cupcake
➡️Decorate each cupcake with icing decoration or blueberry
