Homemade Red Dragon Fruit Kuih with Mung Bean Paste Filling 💕aka 红龟糕

♦️This recipe is adapted from Angku Kuih/Red Tortoise Cake 红龟糕 (steam version)
♦️The texture is super chewy since it made with sticky glutinous rice flour
♦️I don’t have tortoise shell mold so I use mooncake mold. They still turn out pretty nice looking
♦️This is another my childhood favorite food

Ingredient for Red Dragon fruit Skin (Qty: 14-15)
🔺Glutinous rice flour x 170g
🔺Icing sugar x 20g
🔺Red dragon fruit powder pitayafoods x 20g
🔺Warm water x 150g (depends the dough consistency)
🔺Cooking oil x 1.5 tablespoons

Filling:
♦️Homemade mung bean paste

Instructions:
➡️Add the glutinous rice, icing sugar, red dragon fruit powder, warm water, then whisk them all
➡️Add in oil into mixture and knees until well combined
➡️Divide dough into 15 pieces about 25g each
➡️Flatten the dough with palm, top with a small piece JF filling, wrap filling fully with dough. Then, press until firm and shape gently into a ball. And make sure the ball has cover some cooking oil
➡️Put the ball into the mold, press lightly from the top.
➡️Steam with medium heat for between 8-10 minutes
➡️Lightly coat the surface with some oil when it’s done steaming
